Chef’s specialty is emu, as in emu meat and eggs. Her family has a ranch with emus in Oregon, providing her a ready supply. She made for us emu tacos which were superb. For now they will accept donations, though they hope the concept proves business worthy down the road. At that time they might want to call herself the Pop-Up Trail Chef.
They plan to head south, going counter to the wave of northbounders for now, then swinging back north to catch the wave again.
As enjoyable as the food was the conversation they both provided. Uncle Jerry has a Jerry Garcia type vibe while Chef is full of smiles and laughter. There’s a chance we might run into them again up north; we hope we do.
